It is possible to just learn speaking and listening.
I know some people who immigrated to other countries without learning the
language, and they can still be able to communicate with the locals.
I think the key is to use the language whenever possible. When you are
forced to think in that language, you will be able to listen and speak
fluently.
As for your case with your swiss friend, just start with simple words or
phrases first. Once he's mastered that, then you can try and teach simple
sentences, and go from there.
