[問題] 像上營滷味那樣的冷(乾)滷味
最近想來嘗試乾滷味。
不過遇到了一些瓶頸。
像上營滷味那種的冷滷味,
每一攤品項都超級多,量也不少。
想請教版上的先進們,
他們會用冷藏櫥窗保鮮,但是應該也放不了幾天吧?
他們這樣不就幾乎兩三天就要丟一些東西?
我最近嘗試過,
但是像肉類或是菜類的,基本上很難放隔天,
壞不壞是其次,光口感跟鮮度就不對了..........
所以想請教大家,
像這樣的冷魯攤位,是否有其他的保鮮方法?
