The word "assistant" can be used both as a noun or an adjective. For example, most science and engineering PhD students are paid as "reseach assistants", aka RAs, in the states. In this case, "assistant" is used as a noun. However, the youngest professors in Taiwan are now called "assistant professors", where the word "assistant" is used as an adjective. Since "reseach fellow" is a title, or say a noun, "assistant" is used as an adjective in front of it. Also, although the word "assistance" is a noun, it means an action (help) rather than a person. I don't see people use it on their titles too often.
